The better the quality of chocolate and cocoa powder you use, the more enjoyable this recipe will be!
Ingredients
2/3 cupsbittersweet chocolate(chopped)
1tspbrown sugar
1pinchsalt
1pinchcrushed peppercorn
1tspground cinnamon
1tspcocoa powder
3cupsmilk
1cup milk(for the foam)
Instructions
For the hot Chocolate
In a pot, pour 3 cups of milk, add all the spices and cocoa powder, and mix very well.
On a low fire, add the chocolate and whip continuously with a whisk until all the chocolate has melted. Be sure to keep the fire low. If the milk or the chocolate burns at the bottom of the pot, you will get a very unpleasant taste.
After the chocolate has melted and the cocoa powder has dissolved, remove the pot from the stove.
For the foam
In another pot, on a medium fire, pour 1 cup of the milk to make the foam. If you don’t have a milk frother, this step is optional. Alternatively, you could try to apply some physical energy and use a small whisk to achieve a similar result.
In a drinking cup pour the hot chocolate and then with a spoon spread some foam on top of the chocolate. You may sprinkle a little bit more cinnamon if you want.
