Set the oven at 400 degrees, and prepare two baking sheet lined with parchment paper.
Mix the eggs into a stand mixer, with the sugar, until you get a light yellow colour and a smooth texture.
Add the vegetable oil, the vanilla extract, the zest and juice of a lemon and the cottage cheese. Mix again carefully. Set aside.
Into another bowl mix the flour, the baking powder, and the salt.
Now it’s time to add the dry ingredient into the cottage cheese mixture. Mix carefully until smooth texture.
Scoop up some of the batter using an ice cream scoop. Drop the batter onto the parchment paper, keep about 2 inches between the cookies.
Place the baking sheet into the oven, and bake for about 20 minutes at 400 degrees. The cookies will be lightly coloured on the outside and crisp but the inside they will have the texture of a small cake. Perfect with a warm cup of coffee for your afternoon break!
