Lemon Cottage Cheese Cookies

What is cottage cheese

It is a fresh cheese curd with a mild flavour. It was not aged and was never pressed, that is why you will find more whey into cottage cheese than ricotta cheese. Also another important feature of cottage cheese is that most manufactures will had cream into the cottage cheese to give it a much more creamy texture. In this post I will show you how you can make soft cottage cheese cookies in no time!

What can you make with cottage cheese

You do use cottage cheese in so many ways, the list can be very long. However I will share with you my favorite ways where I use cottage cheese.

1- You can use cottage cheese in mac and cheese instead of cream which will make you mac and cheese with a creamy texture with less fat.

2- You can use this cheese with your cereals instead of milk for extra proteins.

3- You can use cottage cheese when you are making a sauce rosé pasta instead of cream.

4- You can use this cheese into cookies to add a chewy texture to your cookies.

How to make cottage cheese cookies

First thing set the oven at 400 degrees, and prepare two baking sheet lined with parchment paper.
Mix the eggs into a stand mixer, with the sugar. After it became a light yellow colour add the vegetable oil, the vanilla extract, the zest and juice of a lemon and the cottage cheese. Mix again carefully. Set aside.
Into another bowl mix the flour, the baking powder, and the salt. Now it’s time to add the dry ingredient into the cottage cheese mixture. Mix carefully until smooth texture.

Now it’s time to shape your cookies. For that it is easy, just scoop up some of the batter using an ice cream scoop. Drop the batter onto the parchment paper, keep about 2 inches between the cookies. Place the baking sheet into the oven, and bake for about 20 minutes at 400 degrees. The cookies will be lightly coloured on the outside and crisp but the inside they will have the texture of a small cake. Perfect with a warm cup of coffee for your afternoon break!

Ingredients

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup cottage cheese

  • 1/4 cup vegetable oil
  • 1/2 cup white sugar
  • 2 eggs (large)
  • 2 lemons (zest and juice)

    I liked the low sugar content so I tried them. Accidentally broke 3 eggs into the bowl instead of 2 – but they turned out great! 20 minutes was too long, in my oven it only took 14. I did throw in a handful of mini chocolate chips. Definitely a keeper!
