Bok choy means “small white vegetables”. They are part of the Brassicaceae family. It is a leafy small kind of cabbage. They become tender when you cooked them. We affectionately call them baby bok choy!
Can you eat bok choy raw
Yes you can eat bok choy raw. Just chopped them finely and add it into your salad. If you eat your cabbage raw you will keep a higher level of vitamin C and K. However I prefer them cooked because their taste become softer and the bok choy become tender.
How to make a bok choy side dish in less than 10 minutes
First thing you need to prepare the bok choy. Cut them in half, remove any damaged leaves and wash them properly. Secondly, chopped the pepper, the garlic and grated the ginger root. Set these ingredients a side for now. Now in a hot skillet add the sunflower seeds oil, the peppers, the garlic, the fresh ginger and the baby bok choy. Toss the bok choy with the rest of the ingredients to make sure that they are well coated with all the ingredients. After a 3 minutes add the soy sauce, the apple vinegar and seasoned them with salt and peppers. Let them cooked for 3 more minutes. To finished them just add 1/2 cup of fish stock and let them cook for another 2 minutes. Served them with any piece of meat of your choice. It is an easy and healthy side dish.

Ingredients
- 12 baby bok choy
- 1 tbsp fresh ginger
- 3 garlic cloves (chopped)
- 1/2 red pepper
- 2 tbsp soy sauce
- 1 tsp apple cider vinegar
- 2 tbsp sunflower seeds oil
- 1/2 tsp salt
- 1/2 tsp ground peppers
- 1/2 cup fish stock (chicken stock or water)
Instructions
