Banana Spice Cookies with Chocolate Chips
In a large mixing bowl, mix the oil and the brown sugar until smooth texture. Add the eggs and the bananas; mix well. Combine the flour, baking powder, the cinnamon, baking soda, salt, and the nutmeg. Add to the creamed mixture and mix very well. Stir in the semi-sweet chocolate chips into the mix. The dough will be very soft.
Prepare 3 cookie sheets with parchment paper. Drop the dough using a cookie spoon onto the cookie sheet, about 2 inches apart. Bake them at 375 degrees for 20 – 30 minutes. Place the hot cookies into a wire rack to cool.
