It is soup season! I love soup during the cold months, nothing like a good soup to keep you warm:) Try this quick & easy leek soup.
Leek soup without milk or cream, is it possible?
The answer is yes! If you have a good ratio of vegetables, potatoes, and not too much bouillon, you will get a thick, and simple soup. So if you are lactose intolerant, or you don’t have on hands cream, no problem, this recipe got you covered.
Quick & Easy Leek Soup
Melt the butter over medium heat in a large soup pot, and add the olive oil at this stage. Add the leeks and cook them until soft, stirring regularly for about 10 minutes. Add the potatoes, the bouillon or water, salt, and pepper into the pot. Cover and turn the heat down to medium-low. Simmer for 20 minutes, or until the potatoes are very soft.
When the potatoes are soft purée the soup with a hand-held blender until smooth or a blender. If you use a blender, do it in small batches because the hot liquid in a blender tent to overfill and you can burn yourself. Garnish with freshly grated parmesan cheese if desired.
Leek soup Quick & Easy
Ingredients
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 5 large leeks, white and light green parts only, roughly chopped
- 3 large potatoes, peeled and roughly chopped
- 5 cups chicken bouillon, but if you don't have any, water will do just fine!
- 1/2 tsp ground black pepper
- 1 tsp salt
- Option grated parmesan cheese if desire
Instructions

- Add the leeks and cook them until soft, stirring regularly, about 10 minutes.
- Add the potatoes, the bouillon or water, salt and pepper into the pot.
- Cover and turn the heat down to medium-low. Simmer for 20 minutes, or until the potatoes are very soft.
