How to make the best carrot cake

So the best way to make the best carrot cake is to use different ingredients than the traditional. This recipe is all about that! First off, place the rack in the middle position and turn on the oven ay 350 °F. Secondly, line two 20-cm (8-inch) springform pans with parchment paper. Do not apply any butter or oil inside the pan at the bottom or on the side. Now, combine the flour, the baking powder, the baking soda, the spices, and the salt. Set the bowl with the dry ingredients aside.

Now it is time for the other ingredients. Add the eggs, the oil, and the sugar, and mix for about 5 minutes, at a high speed. The mix should almost double in quantity. Now add the orange juice, the dry fruits, and the carrots and mix with a wooden spoon. When all the fruits are well incorporated, add the dry ingredients and mix carefully.

Divide the batter among the 2 pans. Bake for about 1 hour and 15 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool in the pan on a cooling rack. Run a knife around the cakes to remove it from the cake pans. When your cake is cooled, only then you can spread the frosting on top of each cake and layered them on top of each other, like in the picture

How to revamp your frosting

If you wish to upgrade your carrot, not only you need to use new ingredients but you should upgrade your frosting. First, add 1 package of cream cheese into a stand mixer, add the icing sugar, the zest of an orange and the juice of 1/2 of orange. Mix carefully all the ingredients together until you get a smooth and creamy texture.

How to store a carrot cake

If you want a moist carrot cake, don’t put it into the fridge. If you store your carrot cake into the fridge it will dry out and it is not good. The best way to store it, it is to use a cake container, that closed hermetically and keep it into a fresh place, like kitchen counter away from heat sources. You can safely keep it there for a maximum of 5 days.

How to make the best carrot cake with the best cheese frosting. 

Ingredients

Carrot cake

  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup orange juice (freshly pressed)
  • 4 eggs
  • 3/4 cup brown sugar
  • 3/4 cup canola oil
  • 4 cups carrots (peeled and grated)
  • 1 cup dry raisins
  • 1/2 cup dry cranberry

Cheese frosting

  • 1 package cream cheese (250 g)
  • 1 orange (zest and juice)
  • 3 cups icing sugar

Instructions

  • Place the rack in the middle position and turn on the oven ay 350 °F. 
  • Line two 20-cm (8-inch) springform pans with parchment paper. Do not apply any butter or oil inside the pan at the bottom or on the side. 
  • Combine the flour, the baking powder, the baking soda, the spices, and the salt. Set the bowl with the dry ingredients aside.
  • Add the eggs, the oil, and the sugar, and mix for about 5 minutes, at a high speed. The mix should almost double in quantity.

  • Now add the orange juice, the dry fruits, and the carrots and mix with a wooden spoon. When all the fruits are well incorporated, add the dry ingredients and mix carefully.
  • Divide the batter among the 2 pans. 
  • Bake for about 1 hour and 15 minutes or until a toothpick inserted in the center of the cake comes out clean. 
  • Cool in the pan on a rack. Run the blade of a knife around the cakes and unmold. 
  • When your cake is cooled then you can spread the frosting on top of each cake and layered them on top of each other.

  • Add 1 package of cream cheese into a stand mixer, add the icing sugar, the zest of an orange and the juice of 1/2 of orange. Mix carefully all the ingredients together until you get a smooth and creamy texture.
