What is a Ratatouille?

There are different ways to make Ratatouille and also there are different recipes for Ratatouille. You can make it with the different type of vegetables. Most of the Ratatouille recipes are using the tomatoes has a base. Some purist will cook all the ingredients separately. Then they will add them together into a pot. They will finish cooking them very slowly in order to get a very smooth texture. Like any of my recipes, I adapt it to fit my taste. I also cook it differently in order to get a very deep flavor of my chosen ingredients. That is why I came up with this recipe and in this article, I will explain how to make Ratatouille-Bruschetta. I love it because it mixes two of my favorite dish. I hope you will like it too.

How to make Ratatouille-Bruschetta?

This recipe is fast to prepared, but it requires long and slow cooking in order to achieve a sensational taste! First thing, preheat the oven at 350 degrees. Secondly, cut all the eggplants, the bell pepper, the onion, the garlic, into cube shapes, of the size of 2 inches by 2 inches. Put all the cut vegetables into a deep cast iron baking dish, like a lasagna dish, it is perfect for the size and its depth. After you have had all the vegetables, add the oil, the balsamic vinegar and all the spices on top of the vegetables and mix very well.

How to cook Ratatouille-Bruschetta?

Cook the Ratatouille covered for about 45 minutes, in the oven. After 45 minutes, remove the lead and add the tomato passata and mix it well. Now cook the Ratatouille for another 30 minutes, uncovered. Stir from time to time the Ratatouille, so the top of the vegetables don’t burn.

How to assemble the Ratatouille-Bruschetta?
Cut the ciabatta bread. Put about a tablespoon of the Ratatouille on each piece of bread and add some shredded Gouda and Parmesan cheese. Bake the Ratatouille-Bruschetta for 10 minutes or until the cheese has browned a little bit. Bon Appetit!

Can you serve cold Ratatouille?

Yes, you can easily eat this Ratatouille cold, like a chutney with a pork filet or on a piece of bread.

How to make Ratatouille-Bruschetta

Can you freeze a Ratatouille?

You can easily freeze the Ratatouille. In can stay in the freezer from 3 to 6 months. When you want to defrost it, take out from the freezer the night before using it, and place the container into the fridge to defrosted safely. Reheat the Ratatouille into a saucepan for 15 minutes or use a microwave.

Ingredients for the Ratatouille

  • 2 eggplants
  • 1 bell pepper (red, orange or yellow)
  • 3 garlic cloves
  • 1 yellow onion
  • 1 cup olive oil
  • 2 tbsp dry oregano
  • 2 tbsp dry basil
  • 3 tbsp balsamic vinegar
  • 2 cups tomato sauce or passata

Ingredients for the final Bruschetta

  • 6 small ciabatta bread (depending for how many people)
  • 2 cups grated Gouda or Cheddar
  • 1 cup Parmesan Cheese

Instructions

  • Preheat the oven at 350 degrees. 
  • Cut all the vegetables into cube shapes, of the size of 2 inches by 2 inches. Put all the cut vegetables into a deep cast iron baking dish, like a lasagna dish, it is perfect for the size and its depth.

  • After you have added all the vegetables, add the oil, the balsamic vinegar and all the spices on top of the vegetables and mix very well. 
  • Covered the baking dish and cook for about 45 minutes, in the oven.

  • Now cook the Ratatouille for another 30 minutes, uncovered. Stir from time to time the Ratatouille, so the top of the vegetables don't burn.

  • Put about a tablespoon of the Ratatouille on each piece of bread and add some shredded Gouda and Parmesan cheese.
  • Bake the Ratatouille-Bruschetta for 10 minutes or until the cheese has browned a little bit.
