Why making a pear and raisins Bundt cake?

This Pear and Raisin Bundt Cake is perfect for breakfast, brunch or with tea for the afternoon snack. I really like to incorporate fruits into my cakes or in any dessert. Therefore I can easily cut on the amount of sugar into the recipe. This recipe makes no exception, there is a small amount of sugar because I used a lot of fruits.

How to keep Pear and Raisin Bundt Cake from sticking?

To make sure that the cake does not stick to the pan, you need to do the following. Grease the Bundt Cake mold with butter or oil. Grease carefully the entire inside of the Bundt cake pan, then add a little bit of flour inside the pan and then move the pan in a way that the flour sticks to the oil or butter were applied. The French culinary term for this is “Chemiser”. Do these steps and your cake will not stick. It is a good trick to know and to use when you are baking. Now, preheat the oven at 375 degrees.

How to make a Pear and Raisin Bundt Cake?

Peel the pears and cut them into small pieces, about the size of 1-inch x 1 inch, set them aside. After that, using a stand mixer, add the eggs, add the yogurt, add the sugar, add the vegetable oil and mix carefully all the ingredients. When everything is well mixed, add the flour, the cut pears, the raisins and mix again.

How to make a simple topping for a Bundt Cake?

Put some of the sugar at the bottom of the prepared baking Bundt cake pan, and add some of the oat flakes. Keep the rest for the other side of the cake. This little topping adds some crunch to the Bundt cake.

Now pour the mixture into the Bundt cake baking dish, on top of the topping. On top of the cake batter, add the rest of the sugar and the oat flakes. Place the baking dish in the oven and cook for 20-30 minutes. To verify that the cake is ready, just pick with a knife. If the knife comes out clean it’s ready:)

How to remove Bundt cake?

To remove a Bundt Cake, it can be tricky. I usually do it, when it cooled down for about 15 minutes, by sliding or poking a knife around the cake gently, on the outside and also around the middle part too, between the cake and the mold. After, I put a flat plate on top of the Bundt cake baking dish and flip it upside down. Now the cake is upside down on a plate, I put another plate on top of it without squeezing it and flip again. Now the cake is on the right side, with a simple crunchy topping. As an option, you can sprinkle some powder sugar too.

Ingredients for the Bundt Cake

  • 1 1/2 cup flour
  • 2 eggs
  • 1 cup vanilla or plain yogurt
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 2 tbsp vegetable oil
  • 3 cleaned pears
  • 1 cup raisins

Ingredients for the topping (optional)

  • 1/2 cup oat flakes (divided in 2 parts)
  • 1/2 cup sugar (divided in 2 parts)

Instructions

Bundt Cake

  • Grease the Bundt Cake mold with butter or oil. Grease carefully the entire inside of the Bundt cake pan, then add a little bit of flour inside the pan and then by moving the pan in a way that the flour sticks to the oil or butter were applied.
  • Preheat the oven at 375 degrees.
  • Peel the pears and cut them into small pieces. About the size of 2 inches x 2 inches, set them aside.

  • When everything is well mixed, add the flour, the cut pears, the raisins and mix again.

Topping

  • Place the baking dish in the oven and cook for 20-30 minutes. To verify that the cake is ready, just pick with a knife. If the knife comes out clean it's ready:)
