How to use whey from cheese making?
So many times I came across recipes for making ricotta cheese at home. But I couldn’t find any recipes like my Whey Pancakes recipe, to use the Whey from the cheesemaking process. You know when you make cheese there is a light liquid left behind, called in French “le petit lait” or “whey” in English, you can see that here. And on so many articles they would suggest to make bread, cake, pancakes or even use it to feed your plants in the house or in the garden but I could not find any recipe. How to make Whey Pancakes?
First thing, put the eggs into a large mixing bowl, and add the baking powder and the baking soda and mix very well. Secondly, add the whey and the milk, and mix again with a whisk. Now add slowly the flour while mixing. This way you will avoid too many clumps of flour. Mix carefully with the whisk.
How to cook Whey Pancakes?
Cooking the whey pancakes is the same as any regular pancakes. Pour the vegetable oil into a small bowl. Now using a little brush, brush the bottom of your hot skillet, and pour a ladle of the whey pancakes batter, move the skillet in a circular motion in order to get thin pancakes or not if you want thicker pancakes. The thickness of the pancakes is up to you.
What to serve with Whey Pancakes?
You can stuff them with your homemade ricotta cheese or store-bought cheese with a coulis of maple syrup. Or you can serve them fruit a fruit salad for a lighter version. These Whey Pancakes are Scrumptious!

Ingredients
- 2 cups whey (from homemade ricotta cheese)
- 1 cup milk
- 2 tsp baking powder
- 1 tsp baking soda
- 2 1/2 cups unbleached flour
- 2 tbsp vegetable oil
- 2 eggs
