White beans dip

White beans, Yankee beans, Boston beans, navy beans, lima beans, kidney beans, cannellini, and fazolia beans. Wow! So many different types of beans! Does it happen to you sometimes that you get to the store and, after looking at the huge selection of beans, you just pick one because it looks like the one you remember from the recipe picture? And then you are leaving the store wondering if you chose the right one? Used to happen to me all the time! Well, that was before I started using the Notes app on my iPhone 🙂

For this recipe, you will need cannellini beans, but if you don't have them, do not worry. You can substitute them with great northern beans and navy beans

White Bean Dip

This dip is quite delicious on a pita or with vegetables. Healthy and easy to make!

Ingredients

  • 2 cups cooked cannellini beans
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 2 garlic cloves
  • 1 lemon zest
  • 1/2 lemon juice
  • 1/2 cup boiled water

Instructions

  • Put two cups of cooked beans into a measuring cup, add olive oil, salt, pepper, garlic, boiled water, lemon zest, and lemon juice.
  • Using a hand blender, make a nice smooth puree.
  • You can drizzle some more olive oil and crack some more pepper and salt to your taste.
