How to make homemade and easy vegetarian nachos?

I really like nachos, I think they are a great vessel for sneaking more vegetables to my kids. This is an easy homemade vegetarian nachos recipe, that you can make in no time. Perfect as a snack for your little kids or for the other big kids while watching the Superball!

Which ingredients to use in vegetarian nachos?

You can choose any vegetables you prefer, but for me, this is one of my favorites. First, preheat the oven at 425 degrees Farenheight. Secondly, diced a big onion, and fry it in a hot skillet with a little bit of vegetable oil. When the onions are slightly colored add a big diced zucchini to the skillet. As soon as the zucchini feels tender, add the corn to the skillet and 2 cups of white beans. Then add the dry oregano, salt, and the pepper. Cook the mix for about 5 minutes and it’s ready.

Now it’s time to make the assemble. In a cast-iron dish put some of the mixtures at the bottom of the dish, then add some nachos, then add more mixture and finally more nachos. Now for the final touch, cover them with a ton of Gouda cheese, I choose Gouda because it’s our favorite but you can use Cheddar too or any cheese that you prefer.

Now it’s time to put the dish in the oven for about 15 minutes and it’s ready. I serve my nachos, with some plain yogurt and my homemade easy salsa. They will ask for more!

Are nachos Mexican food?

Are from the northern Mexico that consists of tortilla chips covered with mince and cheese or a cheese-based sauce often served as a snack. More elaborate versions add other ingredients and may be served as a main dish. Ignacio “Nacho” Anaya is credited with creating the dish in about 1943. The original nachos consisted of fried corn tortillas covered with melted cheese and sliced jalapeño peppers. This is from an article on Wikipedia. Some say that it may be from Mexico but was created for the American palate.

Truth be told, that is from Mexico or not, I really don’t mind, I like them very much. It is easy to change the original nachos recipe and give it a twist with any leftover you have in your fridge.

Can you reheat nachos?

Yes, you can but you have to expect that the nachos will be softer. What I usually do, I put my leftover of nachos into a baking dish, pour the rest of the salsa on top of it, sprinkle more cheese and cook the dish in the oven for 15 minutes at 375 degrees. I serve this with plain yogurt and if I have some fresh tortillas I used them too.

How many nachos per person?

I usually calculate about 3 to 4 cups of chips per person, if its served as a full meal. If it’s served with something else I would calculate about 1 1/5 cup person of chips.

Homemade and Easy Vegetarian Nachos

Ingredients

  • 1 yellow onion

  • 2 tsp grounded pepper
  • 1 tbsp dry oregano
  • 3 cups Gouda cheese (one of your choice)
  • 2 cups plain yogurt (optional)
  • 1-2 bags nachos (depends on how many people)

Instructions
